This is a favorite recipe of mine. Just add your favorite food coloring to the frosting. Sometimes I get crazy and add lemon extract to cookies and frosting for a lemony treat. And for Christmas cookies I change it up by adding 1/4 teaspoon cloves, 3/4 teaspoon cinnamon, 3/4 teaspoon ginger, and 1/4 teaspoon nutmeg for some awesome, soft, gingerbread men.
For Cookies, Mix Together Until Creamy:
3/4 Cup of Softened Butter
1 Cup of Sugar
3 Eggs
1 1/2 teaspoons of Vanilla
1 teaspoon Baking Soda
2 teaspoons of Cream of Tartar
Then Mix in:
3 1/2 Cups of Flour
Directions:
Roll out dough to 1/4 inch thick and use cookie cutters to shape dough. Bake on an ungreased baking sheet at 400°F for 6-7 minutes (This is for a 4,226 feet —1,288 meters— above sea level so adjust your baking time according to your elevation)
For Frosting, Mix Together Until Creamy:
1/4 Cup Shortening
1/4 Cup Softened Butter
2 Cups of Powdered Sugar
1 teaspoon of Vanilla
A Few Drops of Food Coloring
A Shake of Salt
You can add milk a little at a time to achieve the consistency you desire.
Do you remember Victoria magazine? I used to have a subscription in the 90’s. It was full of gorgeous flowers, cottages, travel gems, and antiques. Now it is very expensive and still just as charming.
